Healthy Recipes!


                                                        Lemony, Paprika Sprouts

Need a good, healthy side dish!? How about a little twist on some Brussel Sprouts! My kids even liked these! 

Ingredients:

1lb Brussel Sprouts
2 Tbsp Olive oil
1 Garlic Clove, minced
1 Tsp Smoked Paprika (sweet if preferred)
Zest of 1/2 Lemon
2 Tsps lemon juice (or more if desired)
1 Tsp fresh thyme leaves
Pink Himalayaan salt
Freshly Ground Pepper

Instructions:

Trim ends off of the Brussel Sprouts. Peel off outer leaf. Cut each Sprout in half, and then flat to slice into fine shreds.

Heat Olive Oil in a large skillet over medium heat. Add the garlic and paprika, stir until garlic is fragrant (30 seconds or so). Add sprouts and lemon zest. Saute until crisp-tender.

Remove from heat and stir in the the lemon juice and thyme. Season with salt and pepper to taste. Immediately serve for best taste.

Serving size: 4






Chillin' with Wendi's chili chili 

I've yet to meet someone who doesn't LOVE chili....especially in the Fall!! So here is the recipe I made for my family tonight....and oooo they're loving it!! Hope yours does too!!:D


Ingredients:

1lb Organic Ground Beef
16 oz Organic Tomato Sauce
15 oz Organic Red Kidney Beans
15 oz Organic Pinto Beans
1/2 Onion, Diced
1 Stalk Celery, Diced
1 Can Mild Salsa
2 Cups low sodium Beef Broth
1 Tsp Organic Ground Cumin
1 Tsp Chili Powder
Salt and pepper to taste.

Instructions:

Combine all ingredients into a 5 quart crockpot, cover and cook on low for 6-8 hours.


Optional toppings:
Garlic powder, avocado slices, cheese, plain greek yogurt (healthy swap for sour cream), chives.





                                               
                                                                 Healthy Medley

Honestly, I didn't measure anything. You can add as much or as little of everything that you want to this!

Ingredients:
Chicken Breast ( I used left overs)
Baby Spinach Mix
Mushrooms
Green onions
Quinoa
Fennel Seeds
Garlic

Optional toppings:

Pink Himalayaan Salt
Liquid Aminos
Pepper

Instructions:

Chop  cooked chicken up into small pieces, or shred if you prefer. Add in all ingredients, except spinach, until warm enough for you, and at the very end....add in your spinach and cook until it starts to wilt just a little bit.;)





                                               


                                                    Zoodles with Turkey Meat-a-balls :)







There are 3 steps to this one:

1. Zoodles
2. Meatballs
3. Sauce

1. Zoodles: Ingredients
> Zucchini ( I used 4 large)

Equipment: Spiralizer and Colander

Rinse off and dry zucchini.
Attach zucchini to spiralizer and spiralize your zucchini.....you may need to cut them, or else they might end up never ending!! Drain in colander
Set aside.
Optional: Pinch of salt

2. Meatballs: Ingredients:
> Ground Turkey Breast (I used 2.5lbs)
> 3 Tsp dried Oregano
> 3 Tsp Italian seasoning
> 2 Tsp Rosemary
> 2 Tsp Black Pepper
> Salt to taste ( I used a pinch of Pink Himalayan Salt)
> 2 Tsp of crushed red pepper
> 3.5 Tsp of Garlic
> 2 eggs
> 1 Cup of mozzarella cheese (I used Organic Valley Mozarella shredded cheese)
>  2 Cups Gluten Free bread crumbs ( I used Kinnikinnick Gluten free panko style bread crumbs)
You can also use oats as an alternative.


Directions:

Combine all ingredients into a bowl, mix well.
Make 1 inch meatballs ( I went a little overboard with mine;) and place in a large skillet with about 2 tbsp of olive oil. Put on medium heat. When the bottoms are grey, they are halfway cooked, you can flip them.
Set aside. ( I put in another pan and set them in the oven to keep them warm)

3. Sauce: Ingredients:

> 1 jar 24 oz of Tomato Strained Tomatoes ( I used Bionaturae Organic Strained Tomatoes)
> 1 can 6 oz tomato paste
> 6 oz water
> 3.5 Tbsp minced garlic
> About a tbsp each of garlic powder, onion powder, salt and pepper.
> Chopped Basil

Directions:

Combine all ingredients in a pan and simmer on low. Warm up the zoodles in a pan on low in a tbsp of olive oil, about 3 minutes or so, and viola!! Enjoy!!
